Acorn Squash Spaghetti

 

Preheat oven to 375 degrees.

Meanwhile, cut acorn squash in half. Scoop out seeds with a spoon and discard them.

Place squash face down into a glass baking dish and add 1” of water. Cover dish with tin foil. Bake for approximately 45 minutes, or until they are soft to touch.

Take acorn squash out (Be careful, very hot).

Spoon in your favorite spaghetti sauce in the middle of the squash (Italian sausage optional).

Top with sliced black olives and diced red onion.

Add the squash back to the oven (in the same glass baking dish) face up. Broil on high for another 5 minutes.

Top with fresh cherry tomatoes and cilantro.

Serve and enjoy.
