Eggs in Bell Peppers


Warm a sauté pan with avocado oil. Make sure it’s on low heat.

Sliced a green bell pepper crosswise. Remove the core and/or seeds (discard). 

Add a little more avocado oil inside the bell pepper and cracked two eggs inside. Cook on low for approximately 6-8 minutes (uncovered). 

Top with your favorite seasonings.

Paired with a clementine orange and a handful of blueberries.

If you don’t like sunny side up eggs you can always flip them over and cook for a few minutes.
