Microwave a whole sweet potato for approximately 4 minutes or until 50% cooked.
Cut into 1/2” thick slices (lengthwise) Be careful...it’s hot!
Lightly spray sliced sweet potatoes with avocado or olive oil.
Season with your favorite seasonings on one side.
Warm a pan with avocado oil and place seasoned sweet potatoes side down.
Cook for approximately 5-8 minutes then flip over and cook for another 5-8 minutes (depending how crispy you like your “toast”).
Fill a sauce pan half way with water and bring to a medium simmer.
Stir water clockwise and slowly crack 2 eggs in simmering water. Set timer for 2:30 minutes.
When timer is done, use a skimmer to take eggs out, and place them on a plate with a paper towel (this allows them to dry).
Dice 1/4 avocado and place on top of cooked sweet potato toast.
Place poached eggs on top of avocado.
Serve and enjoy.
