Bone broth cabbage and vegetable soup

Chop 1 white onion and 6 celery stalks.

In a large stock pot (preferably 8 qt. or more), sauté 3 tbls. fresh garlic, 1 tbls. salt, and 1 tbls. pepper in 2 tbls. of avocado oil for approximately 5-8 minutes.

Add 2 qts. of water

Add 2 packs of instant bone broth powder.
Immediately add 2 lbs. of baby rainbow carrots. Simmer for 20 minutes.Add 1 can tomatoes of diced tomatoes (no salt).Add chopped orange bell pepper, 1 lb. of chopped portabella mushrooms, 1 chopped yellow zucchini, and 1 whole roughly chopped cabbage.Add 2 more qts. of water, place a lid on top, and simmer on low for 30 minutes.Turn off the heat, take the lid off, and add in pre cooked kielbasa (chopped).Let this sit/cool for 1 hour.Serve and enjoy.
